Sustainable tourism at the finca
David and Emma care deeply about the long-term sustainability of the Alpujarras region and a week with them will give you a real insight into some of their ongoing projects on their organic finca. From its inception, the finca was always going to be a place where traditional farming methods would be used to enhance and improve the land, creating a restful haven where the fruits of the fields could be harvested for the hotel and restaurant. Central to this idea – and still as important today – has been learning from the locals and working in tune with nature and the seasons. With this uppermost in their minds, David and Emma have always been quick to seek – and accept – help and advice from local farmers who showed them how to irrigate, plough, prune and tend the land in the age-old traditions of the village.
Organic farming
The finca has been granted official ‘organic’ status by the Soil Association, based on farming methods and a complete absence of herbicides and pesticides, thus recognising that all their produce is as fresh, good and natural as nature intended. A welcome by-product of these methods has been the deliberate setting aside of areas of uncultivated land – as all weeds, hedgerows and grasses now have to be controlled the old fashioned way, by hand – leading to an extraordinary variety of flowers and an abundance of insects and bird-life which flourishes in this magical place.

Emma and David Illsley were excellent hosts. They were attentive to ensure we enjoyed our days out, suggesting interesting alternatives to the routes in our Inntravel notes.
The evening meals were delicious, prepared by Conti and served by very friendly staff.
We really enjoyed the peaceful village, quiet roads with no potholes, good walking and the Casa with its lovely, relaxing atmosphere. The almond blossom was stunning and the Booted Eagle flying close by at the the Porto de Ragua was a bonus.
There was a great mix of walks along interesting water channels, through olive, almond and chestnut groves, passing threshing floors en route to charming white washed villages. Walks were relatively short, though often with a climb. This made it ideal as we felt we had some exercise but with ample opportunity to get back to the shade of the hotel before the heat of the day to take a siesta - especially at the start of the holiday which was near the end of the summer heat wave. The food at Las Chimeneas was superb - and we can't wait to follow recipes from their cook book which we bought. Emma and David were attentive hosts who ensured that we felt as included as we wished while they entertained their own group while we were there.

The best thing about the holiday was the family atmosphere, generated by the owners and all the staff. Great food. Excellent walks from the door. We could hear nightingales from our bedroom! Mairena is in a superb location but not at all touristy. David's talks about wildlife, farming, history and religion were fascinating.
The Alpujurras are a delight at this time of year; David and Emma at Las Chimeneas could not have been more welcoming, helpful and knowledgeable. It was, apart from my journey, altogther a very special holiday.
We found some lovely walks around Mairena, especially up the Laroles Valley, and finding Giant Orchids on the walk to Ugijar. David and Emma were delightful hosts, and we enjoyed Conchi's cooking - particularly her paella demonstration at the end of a wet afternoon. Granada and the Alhambra were wonderful as always.
